Rice Krispies Treat Ice Cream Sandwiches RecipeIce cream sandwiches are a unique and different dessert item to serve at your next birthday party. They are perfect to serve during summertime and everyone always loves this special sweet treat.

You normally see ice cream sandwiches made with cookies, but I thought it would making them with Rice Krispies Treats would be an unexpected twist. All you do is make your favorite Rice Krispies Treat recipe – mine is listed below – then cut the treats in half and place a dollop of ice cream in between. I like to make a big batch of these treats ahead of time and place them in the freezer so they are already made when ready to serve. Just be sure to wrap the sandwiches individually in foil first.

  • 5 tablespoons unsalted butter
  • 10-ounce bag of marshmallows (I like to use mini marshmallows)
  • 2 teaspoons pure vanilla extract
  • 6 cups Rice Krispies cereal
  • 1 cup rainbow sprinkles
  • 1 pint vanilla ice cream, slightly softened

Butter a 9×13 baking dish; set aside until ready to use.

Melt the butter in a large pot over medium heat. Add the mini marshmallows and stir until the marshmallows are completely melted. Remove the pan from the heat and add the vanilla (be careful because the marshmallows will rise and bubble up), cereal, and sprinkles. Stir to coat the cereal with the melted marshmallows.

Pour the mixture into the prepared baking dish. Using your hands (it makes it easier if you butter your hands first), press the mixture down into the pan. Place the pan in a cool spot to harden, about 1 hour.

Once the treats have hardened, cut them into 16 thick pieces. Cut each piece in half horizontally.

Place 1 small dollop of softened ice cream on the bottom piece of each Rice Krispies Treat pair. Top with the matching topper. Serve immediately, or wrap each sandwich in foil and place freeze until ready to serve. (These last up to 2 weeks in the freezer.)

Mint Chip Ice Cream Pie RecipeNo one can resist ice-cold treats this time of year! So for an alternative to your typical birthday cake, whip up this refreshing ice cream pie that will put a smile on your guests’ faces.

Let yourself get creative by experimenting with different kinds of ice cream. Although mint is great for summer, you can also use peppermint, raspberry, or any of your favorite flavors!


  • Half package of chocolate sandwich cookies with vanilla center (Oreo style)
  • 4-5 tablespoons melted butter
  • Half-gallon mint chip ice cream (or any flavor that you like!)

Preheat oven to 350 degrees.

Put cookies in food processor and pulse until finely crumbled.

Set aside 3 tablespoons of cookie crumbs.

Melt butter in microwave-safe bowl.

Mix cookie crumbs and butter together in bowl, then dump them into a 9-inch pie dish. Press mixture firmly across bottom and halfway up the sides of pie dish to create crust. Bake at 350 degrees for 10 minutes and remove from oven.

Let crust cool completely. Add slightly softened ice cream on top of crust; spread evenly.

Sprinkle reserved cookie crumbs to top of ice cream and put in the freezer uncovered until frozen solid. Once frozen solid, you can cover the cake if you need to store it for a few days.

Rest pie on counter for a few minutes before serving to make slicing easier. Enjoy!

Butterscotch Fudge Brownie Recipe

Birthday desserts don’t always have to be colorful and sparkly. They can be unique and different, made out of any flavor you wish. And if you’re looking for a chocolaty dessert that is different than your normal birthday cake, look no further than these Butterscotch Fudge Brownies.

These brownies are filled with butterscotch chips and chocolate chips. These chips melt into the brownie batter and create a sweet, gooey element. Once you are ready to serve the brownies, top each piece with a large helping of fudge and/or caramel sauce (I like to do both!).

  • 1 cup all-purpose flour
  • 1/4 cup cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 3/4 cup brown sugar
  • 1/2 cup (1 stick) unsalted butter, melted
  • 2 eggs
  • 1 teaspoon pure vanilla extract
  • 1/2 cup butterscotch chips
  • 1/2 cup chocolate chips, preferably semi-sweet
  • Fudge and/or caramel sauce, for topping

Preheat the oven to 350 degrees. Grease individual square pans or an 8×8-inch baking dish. Set aside until ready to use.

In a small bowl, whisk together the flour, cocoa powder, baking powder, and salt. In a medium bowl, stir together the brown sugar, melted butter, eggs, and vanilla. Add the dry ingredients to the brown sugar mixture and stir until completely mixed. Stir in the butterscotch chips and chocolate chips.

Divide the batter between the individual pans, or pour the batter into the prepared baking dish. Bake the brownies until they have cooked throughout, about 20-25 minutes.

Allow the brownies to cool completely on a cooling rack before serving. If you cooked your brownies in an 8×8-inch baking dish, carefully cut the brownies into bars. Once ready to serve, top each brownie with fudge and/or caramel sauce.

These last up to 4 days in a sealed container.

Funfetti Birthday Pancakes Cake

Funfetti Birthday Pancakes CakeWhat’s better than birthday pancakes? Ones packed with funfetti lathered in frosting!

Pancakes are a pretty common breakfast item, but I like to put them in the dessert-breakfast category. They have all the same ingredients as most dessert items – so it only makes sense to serve them for dessert as well!

To make a celebratory Pancake “Cake, all you do is create four large Funfetti pancakes. Add a thin layer of colorful frosting (use your favorite color to tint it) in between each pancake, and then cut the “cake” into normal cake slices. Your guests will love this unique twist on the birthday cake for this special party.

  • For Funfetti Pancakes:
  • 1 1/3 cups all-purpose flour
  • 1/3 cup Funfetti cake mix
  • 3 teaspoons baking powder
  • 2 tablespoons sugar
  • 1 teaspoon salt
  • 1 1/4 cups milk
  • 1 egg
  • 2 tablespoons olive oil
  • 1 1/2 teaspoons pure vanilla extract
  • 2 tablespoons colorful sprinkles
  • For the Frosting:
  • 1 1/2 cups (3 sticks) unsalted butter, at room temperature
  • 3 cups confectioners’ sugar
  • Pinch salt
  • 2 tablespoons milk
  • 1 teaspoon pure vanilla extract
  • Food coloring of your choice

In a large bowl, whisk together flour, Funfetti cake mix, baking powder, sugar, and salt. Add the milk, egg, olive oil, and vanilla. Whisk until completely smooth. Stir in the colorful sprinkles.

On medium heat, lightly oil a skillet, griddle, or frying pan. Make sure the pan is fully heated before cooking the pancakes. Pour about ¾ cup (I use a large ladle) of the batter on the pan in rounds. Bake until bubbles form in the batter and then carefully flip the large pancake. Cook until lightly browned on both sizes. Continue with remaining batter. You be will be able to make 4 large pancakes.

To make the frosting, cream the butter in the bowl of a stand mixer fitted with the whisk attachment until light and fluffy, about 5 minutes.

Add the confectioners’ sugar and salt, then mix (gradually increasing in speed) until the sugar is fully incorporated, about 5 minutes. You may need to stop the mixer and scrape down the sides of the bowl a couple of times.

Add the milk and vanilla and whisk until the mixture is light and fluffy, about 3 minutes. Once the buttercream is creamy and airy, the buttercream is done!

To color the buttercream, add about 10 drops of the desired food coloring to the frosting. Mix until the food coloring had colored all of the frosting and no white is showing.

To assemble the “cake,” stack the pancakes and place a thin layer of frosting in between of each layer. I like to make the frosting a little thinner so it will melt into the pancakes.

Once ready to serve, cut the pancake cake into small triangle pieces. Serve with whipped cream (optional). These are best enjoyed the same day as making and assembling.

S’Mores Birthday Sundae

Throwing a birthday party for your child can often be difficult and time consuming. Sometimes with so much to do baking a birthday cake just isn’t an option. So instead of picking up a cake from the local grocery store, lets make things more fun and delicious by throwing together these easy S’mores Birthday Sundaes. Using all store-bought items, you can put together these Sundaes in less than 5 minutes. The most complicated thing you have to do is toast the marshmallows, which takes only seconds and is super easy.

  • Graham Cracker Crumbs
  • Hot Fudge
  • Vanilla Ice Cream
  • Large Marshmallows
  • Colorful Sprinkles
  • Birthday Candle, Optional

Take out as many individual bowls, glasses, or dishes as you need. Assemble the sundaes by layers the ingredients in the following order: 1) Graham Cracker Crumbs 2) Ice Cream 3) Hot Fudge 4) Graham Cracker Crumbs and 5) Colorful Sprinkles.

Place a large marshmallow on top of the sundae.

Using a kitchen torch, your stove flame or an oven broiler, carefully torch the marshmallow until toasted and slightly melted.

Top the sundae with a candle. Enjoy!

Jelly Bean Carrots

Here’s a bunch of carrots kids will definitely want to nibble on. These make a sweet favor for a party or a welcome treat in any Easter basket. To change the size of the carrot, simply adjust the amount of beans in the bag.

What you’ll need

  • Disposable clear plastic icing bags (available where cake-decorating supplies are sold; about $4 for a dozen bags)
  • Orange jelly beans
  • Scissors
  • Green tissue paper
  • Twist ties

How to make it

  1. Fill an icing bag with orange jelly beans, leaving at least 3 inches unfilled at the top.
  2. Cut out two 8-inch squares of green tissue paper and lay one atop the other. Pick up the squares from the center and give them a little twist so you have a cone-shaped carrot top.
  3. Gather the bag at the top of the jelly beans and secure with a twist tie, wrapping the tie around the “stem” of the tissue paper, so the greenery sticks out of the top.

Lovin’ Spoonfuls

These whimsical white chocolate confections — perfect for Valentine’s Day gifts or party favors* — can be eaten right off the spoon or stirred into cups of hot cocoa.

What you’ll need

  • white chocolate
  • small candies
  • plastic spoons and lollipop bags
Helpful Tip:* Present the spoons in lollipop bags sealed with twist ties or ribbon. If you like, include a note explaining that the spoons make great hot cocoa stirrers.

How to make it

  1. Arrange plastic spoons so that their bowls are level (we set ours with the handles resting on the edge of a cookie sheet).
  2. For every eight spoons, melt 6 ounces of white chocolate in a microwave-safe bowl according to the package directions, then transfer the chocolate to a ziplock bag and snip off a corner.
  3. Pipe the chocolate into each spoon and gently tap the spoons on your work surface to level the chocolate. Sprinkle small candies, such as conversation hearts, red hots, and nonpareils, on top. Let the chocolate cool completely.
