I love finding new and fun ways of incorporating the Funfetti taste and appearance into other birthday treats. For this recipe, I made bars made with Funfetti for an ooey-gooey melted and toasted marshmallows.
Funfetti is one of my favorite types of cakes to make for a birthday party. The colorful sprinkles really scream “Happy Birthday!”
My favorite thing about these bars is the marshmallow topping. While the bars are baking, the marshmallows are melting and getting slightly torched, creating a sticky texture that adds a wonderful contrast to the light and fluffy Funfetti bars beneath.
- 1 box Funfetti cake mix
- 1/4 cup vegetable oil
- 1/3 cup milk
- 2 eggs
- 2 cups marshmallows
- 1/2 of a 14 ounce can sweetened condensed milk
- Sprinkles, for topping
Preheat the oven to 350 degrees F. Line an 8×8-inch baking dish with foil; set aside until needed.
Place the Funfetti cake mix in a medium bowl. Add the oil, milk, and eggs, and stir to combine. Pour the batter into the prepared pan and pour half of the sweetened condensed milk over the batter. Sprinkle the marshmallows on top and pour the remaining sweetened condensed milk on top of the marshmallows.
Place the pan in the oven and bake until the top is a rich golden brown and the batter no longer jiggles, about 30 minutes.
Remove the pan from the oven and place on a cooling rack to cool completely. Once the bars have cooled completely, carefully cut the bars into about 15 pieces. Place the bars on a dish to serve. (These bars also last up to 7 days in a sealed container.)
